Foeniculum vulgare, commonly known as Fennel, is an upright perennial herb with feathery foliage. From mid to late summer, this statuesque Mediterranean native produces tiny, bright yellow flowers that hover above the delicate leaves. Every part of the plant—from its thick taproot to its hollow stems and seeds—emits a distinct, sweet anise or licorice fragrance when crushed. Valued for its architectural height and culinary versatility, fennel is also a crucial wildlife plant, serving as a primary host plant for Black Swallowtail butterfly caterpillars and drawing in parasitic wasps, bees, and other beneficial pollinators.
